  • 3 tablespoons soy sauce low-sodium preferred
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon lemon juice or rice vinegar
  • 12 ounces noodles rice or wheat noodles, cooked al dente
  • 2 scallions scallions sliced thinly, for garnish
