  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice freshly squeezed
  • 1 pinch salt

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine rolled oats, flour, and brown sugar, then add the cold butter. Use your fingers or a pastry cutter to work the butter into the dry ingredients until the mixture resembles coarse crumbs.

  2. Press about two-thirds of the crumb mixture into the bottom of a greased baking dish, creating an even layer. Bake for 10-12 minutes until lightly golden, which helps form a sturdy crust.
  3. While the crust bakes, prepare the strawberry filling by tossing the sliced strawberries with granulated sugar, lemon juice, and a pinch of salt in a bowl. Let this mixture sit for a few minutes to allow the berries to release their juices.

  4. Once the crust is golden, remove it from the oven and evenly spread the strawberry mixture over the baked crust.

  6. Return the dish to the oven and bake for an additional 20 minutes, or until the topping is golden brown and bubbling around the edges.
  7. Allow the bars to cool in the baking dish for at least 15 minutes, which helps them set and makes slicing easier.

Notes

For extra flavor, add a sprinkle of powdered sugar on top before serving. To make it Vegan, substitute butter with coconut oil or vegan margarine.
