Method
 

  1. Place the strawberries into a food processor and blend until smooth, resulting in a vibrant red puree with a slightly thick consistency.
  2. Add the softened cream cheese, lemon zest, and honey to the strawberry puree, then pulse until the mixture is smooth and well combined, with a creamy texture.
  3. Scoop out small spoonfuls of the mixture and roll them gently between your palms to form little balls. Place each ball on a parchment-lined baking sheet or plate.
  4. Repeat the process until all of the mixture is shaped into bites. Chill in the refrigerator for at least 30 minutes to firm up.
  5. Once chilled, serve the strawberry cream cheese bites directly from the fridge for a cool, creamy treat with a vibrant color and inviting aroma.
