Strawberry Cheesecake Overnight Oats

This dish is a no-bake breakfast featuring oats soaked overnight in a strawberry and vanilla-infused mixture. The final product has a creamy, pudding-like texture with visible strawberry pieces and a subtle cheesecake flavor. It combines the smoothness of oatmeal with the sweet, tangy notes of strawberries and vanilla, resembling a cheesecake in a jar.

Ingredients

  • 1 cup rolled oats preferably old-fashioned
  • 1/2 cup plain Greek yogurt for creaminess
  • 1/2 cup milk dairy or plant-based
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped fresh strawberries or thawed frozen strawberries
  • 1 tablespoon cream cheese softened

Equipment

  • Mixing jar or container
  • Spoon or mixing utensil

Method

  1. Add the rolled oats, Greek yogurt, milk, honey, vanilla extract, and softened cream cheese to a clean jar or container.
  2. Stir everything together thoroughly until the mixture is smooth and the oats are evenly coated. You should see a slightly creamy and speckled mixture with no dry oats remaining.
  3. Gently fold in the chopped strawberries, distributing them evenly throughout the mixture. The berries will add bursts of color and flavor as you stir.
  4. Seal the jar or cover the container and place it in the refrigerator overnight or at least for 8 hours. This allows the oats to soak and absorb the flavors, becoming tender and creamy.
  5. In the morning, open the jar and give the oats a gentle stir to redistribute any settling. The mixture should be thick, creamy, and speckled with strawberry pieces.
  6. Enjoy the oats straight from the jar or transfer them to a bowl. You can top with additional strawberries, a drizzle of honey, or a sprinkle of granola for extra texture and flavor.
