Ingredients

  • 1 cup fresh strawberries, chopped about 10-12 berries
  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Equipment

  • Mixing bowls
  • Silicone spatula

Method

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine the softened cream cheese and granulated sugar. Use a spatula or hand mixer to blend until smooth and creamy, with no lumps remaining.
  3. Add the egg and vanilla extract to the cream cheese mixture. Whisk or mix until fully incorporated and the mixture is slightly fluffy.
  4. Gently fold in the chopped strawberries, being careful not to mash them; aim for even distribution so each cookie has plenty of fruit.
  5. In a separate bowl, whisk together the flour, baking powder, and salt to evenly combine.
  6. Gradually add the dry mixture to the wet ingredients, folding gently until just combined and a soft dough forms.
  7. Use a cookie scoop or spoon to portion out dough onto the prepared baking sheet, spacing cookies about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the centers look just set.
  9. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. The cookies will be soft but set.
  10. Enjoy these cookies once cooled — their tender texture and burst of strawberry flavor make them perfect for serving with a glass of milk or tea.
