  • 4 slices bread slices your choice of bread, preferably sturdy
  • 4 slices cheddar cheese or your favorite melting cheese
  • 4 slices bacon slices cooked until crispy
  • ½ cup pickles sliced
  • 2 tablespoons chipotle mayonnaise or your favorite spicy mayo
  • 2 teaspoons chipotle pepper in adobo pureed into the mayonnaise

Method
 

  1. Spread the chipotle mayonnaise evenly on one side of each bread slice, creating a flavorful base layer.
  2. Layer slices of cheese on two of the bread slices, ensuring full coverage for melting.
  3. Place the crispy bacon slices over the cheese on one of the prepared slices for added crunch and smoky flavor.
  4. Top the bacon with sliced pickles for a tangy contrast and layer the remaining bread slice on top, mayo side down, to assemble the sandwich.
  5. Preheat a skillet or grill pan over medium heat, allowing it to warm up until it’s hot and slightly smoking.
  6. Place the assembled sandwich in the hot pan, pressing down gently with a spatula, and cook for 3-4 minutes until the bread turns golden brown and crispy.
  7. Flip the sandwich carefully and cook the other side for another 3-4 minutes until equally crisp and the cheese is melted.
  8. Remove the sandwich from the pan and let it rest for a minute to settle the fillings before slicing diagonally or in halves.
  9. Slice the sandwich open to reveal the gooey cheese, crispy bacon, and smoky spread inside—ready to serve and enjoy.
