Ingredients

  • 4 pieces chicken breasts boneless, skinless recommended
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon salt flaky sea salt preferred
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried herbs such as thyme or rosemary
  • 1 teaspoon lemon zest or juice optional for brightness
  • 1 clove garlic minced or garlic powder
  • 1/2 teaspoon paprika smoked or sweet

Equipment

  • Baking dish or ovenproof skillet
  • Meat thermometer
  • Paper towels
  • Basting brush

Method

  1. Preheat your oven to 200°C (390°F) and set a baking dish nearby.
  2. Pat the chicken breasts dry with paper towels to remove excess moisture, ensuring a nice sear and even baking.
  3. Rub each chicken breast with olive oil, coating evenly to help the seasonings stick and promote browning.
  4. Sprinkle salt, pepper, dried herbs, lemon zest or juice, minced garlic, and paprika over the chicken, massaging the seasonings into the meat for flavor.
  5. Place the seasoned chicken breasts in the baking dish, skin-side up if they have skin, ensuring they aren’t crowded so heat circulates evenly.
  6. Bake the chicken in the preheated oven for 20-25 minutes, until the surface is golden and the juices run clear when pierced.
  7. Check the internal temperature with a meat thermometer; it should read 75°C (165°F) in the thickest part of the breast.
  8. Once cooked, remove the chicken from the oven and let it rest for 5 minutes on a cutting board to retain its juices.
  9. Slice the chicken against the grain into thick, juicy slices, revealing a tender, moist interior.
  10. Serve immediately with your favorite sides, enjoying the tender, flavorful crust and moist meat.

Notes

Ensure chicken is dried thoroughly before seasoning for a crisp exterior. Resting is key to retaining juices. Feel free to customize seasonings for different flavor profiles.
