Method
 

  1. Preheat your oven to 400°F (200°C) and line the sheet pan with parchment paper for easy cleanup.
  2. Slice the apples into thin wedges, about ¼-inch thick, and place them in a mixing bowl. Toss with cinnamon to coat evenly, which releases a warm fragrant aroma.
  3. Remove the sausage from its casing and crumble it into small pieces. This helps it cook evenly and creates a hearty, sausage-filled pattern.
  4. Drizzle olive oil over the sheet pan, then spread the sausage evenly across the surface using a spatula or tongs. Bake for about 10 minutes until the sausage begins to brown and crisp at the edges.
  5. Once the sausage is partly cooked, remove the sheet pan and carefully spread the cinnamon-coated apple slices over the sausage in an even layer. Drizzle with a little more olive oil, and season with salt and pepper to taste.
  6. Return the pan to the oven and roast for another 20 minutes, until the apples are golden and caramelized, and the sausage is fully cooked with crispy edges.
  7. Remove the sheet pan from the oven, let it rest for a few minutes, then serve the roasted apples and sausage warm directly from the pan for a rustic, comforting breakfast.

Notes

For extra flavor, sprinkle a little brown sugar or drizzle maple syrup before roasting. You can also add chopped herbs like sage or thyme for a fresh touch.
