Ingredients
  

  • 4 cups fresh spinach washed and drained
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon olive oil extra virgin recommended
  • 2 cloves garlic minced
  • to taste salt
  • to taste black pepper

Method
 

  1. Heat the olive oil in a skillet over medium heat until shimmering and fragrant.
  2. Add the minced garlic to the skillet and sauté for about 30 seconds until it becomes fragrant and slightly golden, stirring continuously to prevent burning.
  3. Pile in the washed spinach gradually, stirring with a wooden spoon to wilt the leaves evenly. Continue adding until all the spinach is in the skillet.
  4. Cook for 2–3 minutes, stirring occasionally, until the spinach is just wilted, tender, and has released some of its moisture. Feel the leaves soften and shrink down as they cook.
  5. Sprinkle the crumbled feta over the spinach and cook for another minute, stirring gently to combine, allowing the cheese to melt slightly and coat the greens.
  6. Season with salt and black pepper to taste, giving the mixture a final stir to distribute the flavors evenly.
  7. Remove the skillet from heat once the feta is slightly melted and the spinach is vibrant green and glossy.
  8. Spoon the warm sautéed spinach and feta onto a plate and serve immediately as a flavorful side or light main course.
