Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp sea salt plus extra for sprinkling
  • 0.75 cup granulated sugar
  • 0.25 cup vegetable oil
  • 0.5 cup unsweetened applesauce substitute for butter
  • 2 large eggs
  • 1 cup ripe bananas, mashed
  • 1 cup hulled strawberries, chopped

Equipment

  • Mixing bowls
  • Loaf pan
  • Measuring Cups and Spoons
  • Whisk or spoon
  • Spatula

Method

  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a large mixing bowl, whisk together the flour, baking powder, sea salt, and sugar until well combined. The mixture should be evenly textured with no visible clumps.
  3. Add the vegetable oil, applesauce, and eggs to the dry mixture. Whisk briskly until the mixture is smooth and slightly thickened, about 1-2 minutes.
  4. Stir in the mashed bananas until fully incorporated, creating a fragrant, slightly sticky batter.
  5. Gently fold in the chopped strawberries, distributing them evenly throughout the batter with a spatula. Expect some moist pockets of fruit.
  6. Pour the batter into the prepared loaf pan, smoothing the top with the spatula. Sprinkle a pinch of sea salt on top for the signature salty-sweet contrast.
  7. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Remove the bread from the oven and let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. The crust should be slightly crisp with a moist, tender interior.
  9. Slice into thick pieces, sprinkle with a little more sea salt if desired, and enjoy the layered flavors of salty and sweet with every bite.

Notes

For a more pronounced salty flavor, sprinkle a few grains of sea salt on top just before baking. You can also add chopped nuts or coconut flakes for extra texture.
