- In a mixing bowl, whisk together eggs, milk, pumpkin puree, sugar, cinnamon, nutmeg, ginger, and salt until the mixture is smooth and fragrant.
- Pour the custard mixture into a shallow dish wide enough to hold the slices of bread and let it sit for a minute or two to relax the flavors.
- Dip each slice of bread into the custard, turning gently to coat both sides evenly. Let the slices soak for about 30 seconds to absorb the flavorful mixture.
- Heat a skillet or non-stick pan over medium heat and add a little butter or oil. Once shimmering, lift the soaked bread slices and place them in the hot pan.
- Cook the french toast until golden brown and crispy on the first side, about 3-4 minutes, then flip and cook the other side until similarly golden and cooked through.
- Remove the cooked slices from the pan and place them on a plate. Repeat with remaining slices, adding more butter if needed, until all pieces are cooked.
- Serve the pumpkin spice french toast warm, topped with your favorite garnishes such as whipped cream, maple syrup, or toasted pecans for added flavor and texture.
Notes
For extra flavor, try adding a splash of vanilla extract to the custard. Leftover slices can be reheated in a skillet for a crispy finish.
