Ingredients

  • 1/2 cup rolled oats preferably old-fashioned
  • 1 cup milk dairy or plant-based
  • 2 tablespoons maple syrup or honey
  • 1/4 cup chopped pecans plus extra for topping
  • 1/2 teaspoon vanilla extract
  • Pinch salt
  • 1 tablespoon butter optional, for toasting pecans

Equipment

  • Small saucepan
  • Wooden spoon or heatproof spatula

Method

  1. Pour the milk into a small saucepan and heat over medium until it just starts to steam, filling the air with a toasty aroma.
  2. Add the rolled oats, maple syrup, vanilla extract, salt, and chopped pecans to the hot milk. Stir gently with a wooden spoon to combine all ingredients evenly.
  3. Bring the mixture to a gentle simmer, then reduce the heat to low. Cook, stirring frequently, until the oats are tender and the mixture thickens, about 5-7 minutes.
  4. If you'd like toasted pecans, melt butter in a small skillet over medium heat. Add the remaining chopped pecans and cook, stirring constantly, until golden and fragrant—about 2-3 minutes.
  5. Remove the oatmeal from heat and let it sit for a minute until slightly thickened. Taste and adjust sweetness if necessary.
  6. Spoon the hot, creamy oatmeal into bowls. Top with the toasted pecans for added crunch and flavor.
  7. Serve immediately and enjoy the warm, nutty aroma and rich, caramelized flavors in every spoonful.

Notes

For extra decadence, add a dollop of whipped cream or a drizzle of chocolate syrup. If the oatmeal becomes too thick, stir in a splash of hot milk to loosen it up. Always taste and tweak the sweetness to your preference.
