Ingredients

  • 3 eggs fresh, large eggs
  • 1/2 cup heavy cream or whole milk for a lighter version
  • 1 cup spinach chopped fresh or frozen, thawed and drained
  • 1/2 cup feta cheese crumbled
  • 1/4 cup sun-dried tomatoes chopped
  • fresh basil or chives chopped, for garnish
  • to taste salt & pepper for seasoning

Equipment

  • Muffin tin
  • Whisk
  • Mixing bowls
  • Oven thermometer
  • Wire rack

Method

  1. Preheat your oven to 180°C (350°F) and lightly grease a muffin tin or line it with parchment squares.
  2. In a mixing bowl, whisk together the eggs and heavy cream until the mixture is smooth and slightly frothy, about 30 seconds.
  3. Add chopped spinach, crumbled feta, and chopped sun-dried tomatoes to the egg mixture. Gently fold to combine everything evenly.
  4. Season with salt and pepper to taste, then give the mixture a final gentle whisk to incorporate the seasonings.
  5. Pour the filling into each muffin cup, filling about three-quarters full to allow room for puffing.
  6. Bake in the preheated oven for 20 to 25 minutes, until the tops are golden brown and slightly puffed up.
  7. Once baked, remove the muffin tin from the oven and let the bites sit for 5 minutes to set and cool slightly.
  8. Use a fork or small spatula to carefully transfer the mini quiche bites onto a wire rack, allowing excess moisture to escape and preventing sogginess.
  9. Garnish with freshly chopped basil or chives for a burst of color and flavor, then serve warm or at room temperature.

Notes

For extra flavor, add chopped herbs or different cheeses. Make sure not to overbake to keep the bites tender and creamy inside.
