Ingredients
  

  • 1 ½ cups all-purpose flour sifted for best texture
  • 2 tablespoons granulated sugar

  • 1 cup milk warm for better activation
  • 2 large eggs beaten lightly
  • 3 tablespoons unsalted butter melted and slightly cooled

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease your baking dish or ramekins to prevent sticking.
  2. In a large mixing bowl, whisk together the sifted flour, sugar, baking powder, and salt until well combined. This ensures an even distribution of leavening and flavor.
  3. In a separate bowl, warm the milk slightly and then whisk in the eggs until smooth. Add the melted butter and stir until fully incorporated. You should have a smooth, slightly bubbly mixture.
  4. Pour the wet mixture into the dry ingredients and gently fold together with a spatula until just combined. Do not overmix; a few lumps are fine, as they help keep the bites tender.
  5. Spoon the batter into the prepared baking dish or ramekins, filling each about three-quarters full. The batter should be slightly mounded and smooth on top.
  6. Place the dish in the oven and bake for 12-15 minutes, or until the bites are golden brown and puffed up, with a slight crispness on the outside and a fluffy interior.
  7. Remove from the oven and let cool for a few minutes. Use a spatula or spoon to gently loosen the edges if needed, then serve warm, with your favorite toppings or fresh fruit.

Notes

For added flavor, mix in blueberries, cinnamon, or chocolate chips into the batter before baking. To make ahead, store in an airtight container and reheat gently in the microwave.
