Method
 

  1. Add honey, Dijon mustard, and apple cider vinegar to a mixing bowl.
  2. Whisk the ingredients vigorously until the mixture is smooth, glossy, and well combined. You should hear a slight foaming or bubbling as it comes together.
  3. Pour in the olive oil slowly while whisking continuously to emulsify the sauce, creating a creamy, cohesive texture.
  4. Continue whisking until the sauce is thick, smooth, and has a slight sheen—the color should be golden with a hint of mustard yellow.
  5. Taste and adjust the tang by adding a splash more vinegar if desired, or a drizzle more honey for extra sweetness.
  6. Transfer the sauce to a jar or serving dish and serve immediately, or refrigerate to let the flavors meld for up to a week.
