  • 4 pieces chicken breasts preferably skinless, boneless
  • 2 tablespoons olive oil good quality for flavor
  • 1 lemon lemon zest and juice zest and juice fresh for brightness

  • 2 tablespoons fresh herbs chopped thyme, rosemary, parsley

Method
 

  1. Preheat your oven to 200°C (390°F) and have a skillet ready on the stove.
  2. Pat the chicken breasts dry with paper towels—this helps achieve a crispy skin and ensures even browning.
  3. In a small bowl, whisk together olive oil, lemon zest, lemon juice, and minced garlic to create a vibrant marinade.
  4. Rub the marinade all over the chicken breasts, making sure to coat evenly and get some underneath the skin if possible.
  5. Heat your skillet over medium-high heat until it’s hot and starts to shimmer, about 2-3 minutes.
  6. Place the chicken breasts skin-side down in the skillet and sear until golden brown and crispy, about 3-4 minutes. You should hear a satisfying sizzle.
  7. Flip the chicken using tongs and cook for another 2 minutes, building up a nice color on both sides.
  8. Transfer the skillet to the preheated oven and roast until the internal temperature reaches 65°C (149°F), about 15-20 minutes. The chicken should feel firm but yield slightly when pressed.
  9. Remove the skillet from the oven and let the chicken rest for 5 minutes, allowing juices to redistribute and keeping it moist.
  10. Squeeze fresh lemon over the chicken and sprinkle with chopped herbs for a bright, flavorful finish.
