  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 eggs large eggs
  • 1 cup buttermilk or milk + a tablespoon of vinegar
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1/2 cup hot water boiling or very hot
  • food coloring gels in various colors edible gel colors for swirling patterns

  • 1/2 cup heavy cream

Method
 

  1. Preheat the oven to 350°F (175°C). Grease your cake pans and lightly dust with flour to prevent sticking.
  2. In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Whisk until combined and set aside.
  3. In a separate bowl, mix the eggs, buttermilk, vegetable oil, and vanilla extract until smooth and well combined. Use a whisk or hand mixer for a few minutes.
  4. Gradually add the wet mixture into the dry ingredients, stirring gently until just incorporated. Then, carefully pour in the hot water, mixing slowly to keep the batter smooth and thin.
  5. Divide the batter evenly between your prepared pans. Tap the pans lightly on the counter to remove air bubbles.
  6. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. The cakes will be slightly risen and set with a moist crumb.
  7. Remove the cakes from the oven and let them cool in the pans for 15 minutes. Then, transfer to a wire rack and cool completely to room temperature.
  8. Once cooled, place one layer on a serving plate. Carefully spread a thin layer of frosting or ganache as a crumb coat, then top with the second layer of cake.
  9. Divide a small amount of frosting into separate bowls, and add various gel food colors to each. Swirl the colors gently to create vibrant, marbled patterns.
  10. Drop spoonfuls of the colorful gels onto the top of the cake, then use a spatula or toothpick to swirl the colors into a cosmic pattern, creating a galaxy effect.
  11. Prepare the glaze by melting the dark chocolate with heavy cream over a double boiler, stirring until smooth and glossy. Pour the shimmering glaze over the cake, letting it drip down the sides.
  12. Decorate the top with edible glitter, star-shaped sprinkles, and shimmering accents to mimic a star-filled universe. Allow the glaze to set for 10-15 minutes before serving.
  13. Slice the cake to reveal the swirling galactic patterns and enjoy the rich, fudgy texture with a dazzling cosmic appearance.
