Ingredients

  • 4 cups ripe tomatoes, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 0.5 teaspoon red pepper flakes optional for heat
  • to taste salt and black pepper
  • 2 tablespoons nutritional yeast for cheesy umami flavor

Equipment

  • Knife
  • Cooking pot
  • Blender or immersion blender
  • Wooden spoon or spatula

Method

  1. Heat the olive oil in a cooking pot over medium heat until shimmering and fragrant.
  2. Add the minced garlic and red pepper flakes, cooking for about 30 seconds until the garlic turns golden and releases aroma.
  3. Add the chopped tomatoes to the pot, stirring well to coat them in the garlic and oil. Cook for about 10 minutes, stirring occasionally, until the tomatoes break down and the mixture thickens slightly.
  4. Use a blender or immersion blender to puree the tomato mixture until completely smooth and vibrant red. Be careful to blend until no chunks remain.
  5. Return the blended sauce to the pot and season with salt and black pepper to taste. Let it simmer gently for another 5 minutes to allow flavors to meld.
  6. Stir in the nutritional yeast, mixing well to incorporate its cheesy flavor into the sauce until smooth and creamy.
  7. Check the seasoning and adjust with additional salt or pepper if needed. The sauce should be thick, velvety, and glossy.
  8. Spoon the sauce over cooked pasta, rice, or your favorite comfort foods. Serve hot and enjoy the rich, cheesy, tomato flavor.
